Meal Plan #38

This week we are eating chicken and chickpea curry, fish tacos, chicken fried steak and mushroom risotto. We also have a pizza pasta bake for the weekend, healthy breakfast options and the tuna salad for lunch.

Chicken Chickpea Curry

Fish Tacos

Why You’ll love this recipe:

  • Quick and easy. This recipes comes together in just 30-ish minutes.
  • Bake, deep fry or Air Fry. I like frying the fish for a super crisp crust but feel free to bake or air fry instead.
  • Customizable. We like chipotle crema, cabbage and avocado on these tacos but a variety of salsas and vegetables are all delicious with fish tacos.

Wednesday

Chicken Fried Steak

Why You’ll love this recipe:

  • Complete comfort. This is my mom’s recipe for chicken fried steak and is one of my ultimate comfort food recipes.
  • Simple to make. A quick egg and flour breading is all that’s needed for the coating before the chicken is fried until crisp and golden.
  • Great with a variety of sides: Mashed potatoes are our go-to side dish for chicken fried steak but rice, buttered pasta and a variety of vegetables will all be delicious.

Creamy Mushroom Risotto
