Monday
Baked Lemon Chicken and Rice
Why You’ll love this recipe:
- Easy to make. All in one pan and in less than an hour? Yes please!
- Great with a variety of side dishes. Serve as is for an easy, no-fuss dinner or add a big side salad or some broccoli.
- Great for leftovers. The leftovers make a delicious lunch the next day!
Tuesday
Easy Lasagna Soup
Why You’ll love this recipe:
- Easy to make. This recipe is basically just an extra saucy bolognese sauce with pasta cooked right in the sauce. Great to use up leftover bolognese!
- Customizable. I love this recipe with broccoli as it’s a vegetable I often have in the fridge. This pasta would be delicious with asparagus, peas, mushrooms, etc. Add baked chicken breasts for a boost of protein.
Wednesday
Baked Risotto with Garlic Butter Mushrooms
Why You’ll love this recipe:
- So easy. None of the stirring for ages and ready in 40 minutes!
- Versatile. Great as a vegetarian main or as a fantastic side dish for steak or roast chicken.
- Perfect result, every time. The risotto turns out perfectly al dente and creamy, guaranteed!
Thursday
Air Fryer Orange Chicken
Why You’ll love this recipe:
- Cooking method: The air fryer makes this recipe a little healthier (no deep-frying) but you can absolutely fry the chicken too. Follow my Classic Orange Chicken if you prefer a fried version.
- Takeout Fakeout. There’s nothing better than a better-than-take-out dinner at home.
Friday
Smashed Burger Tacos
Why You’ll love this recipe:
- Quick and easy: Season the beef, smash onto tortillas and cook. This is an idiot-proof recipe!
- Prep ahead: The tacos can be assembled, stacked with parchment paper and refrigerated for a few hours ahead of cooking.
