- Ciabatta bread.
- Salami.
- Mozzarella.
- Roasted red peppers. Optional. Tomatoes are a great substitute.
- Marinated eggplant.
- Rocket/Arugula.
- Fresh basil.
How to make a ciabatta sandwich
- Toast the bread: Slice the bread in half with a sharp bread knife. Remove some of the bread from the top half (to make space for all the filling). Drizzle with a little olive oil then toast in a hot pan/grill pan until golden brown.
- Assemble: Drizzle some of the marinated eggplant marinade onto the bottom piece of bread. Top with salami, sliced mozzarella cheese, marinated eggplant, roasted red peppers, rocket/arugula and basil. Drizzle more of the marinade over the greens then add the top piece of bread. Slice into portions and serve.

Yes! This sandwich can be made up to 4 hours in advance. Slice the sandwich and wrap well with parchment paper.

- 200 g (7oz) salami
- 200 g (7oz) mozzarella sliced
- 2 cups marinated eggplant
- 100 g (3oz) roasted peppers
- 3 cups rocket/arugula
- ½ cup fresh basil
Instructions
