Salami, Mozzarella and Eggplant Ciabatta Sandwich
This family-size ciabatta sandwich filled with salami, mozzarella and marinated eggplant is the perfect summer lunch recipe.

Ingredients needed
- Ciabatta bread. I love the crustiness of ciabatta but any good bread will work. Baguette, a hoagie roll and even sandwich bread will be delicious.
- Salami. Other charcuterie like prosciutto, coppa, thin slices of Black Forest ham or mortadella can also be used.
- Mozzarella. Provolone cheese is also a good choice.
- Roasted red peppers. Optional. Tomatoes are a great substitute.
- Marinated eggplant.
- Rocket/Arugula.
- Fresh basil.
- Optional extras: Mayonnaise, cream cheese, Dijon mustard.

How to make a salami sandwich
- Toast the bread: Slice the bread in half with a sharp bread knife. Remove some of the bread from the top half (to make space for all the filling). Drizzle with a little olive oil then toast in a hot pan/grill pan until golden brown.
- Assemble: Drizzle some of the marinated eggplant marinade onto the bottom piece of bread. You could also add a few teaspoons of mayo or cream cheese to the bottom layer. Top with salami, sliced mozzarella cheese, marinated eggplant, roasted red peppers, rocket/arugula and basil. Drizzle more of the marinade over the greens then season to taste with salt and black pepper and add the top piece of bread. Slice into portions and serve.
Can I make this ciabatta sandwich in advance?
Yes! This sandwich can be made up to 4 hours in advance. Slice the sandwich and wrap well with parchment paper.
