  • Salami. 
  • Mozzarella. 
  • Roasted red peppers. Optional. Tomatoes are a great substitute.
  • Marinated eggplant.
  • Rocket/Arugula. 
  • Fresh basil.

How to make a ciabatta sandwich

  1. Toast the bread: Slice the bread in half with a sharp bread knife. Remove some of the bread from the top half (to make space for all the filling). Drizzle with a little olive oil then toast in a hot pan/grill pan until golden brown.
  2. Assemble: Drizzle some of the marinated eggplant marinade onto the bottom piece of bread. Top with salami, sliced mozzarella cheese, marinated eggplant, roasted red peppers, rocket/arugula and basil. Drizzle more of the marinade over the greens then add the top piece of bread. Slice into portions and serve.

Can I make this ciabatta sandwich in advance?

Yes! This sandwich can be made up to 4 hours in advance. Slice the sandwich and wrap well with parchment paper.
