Watermelon Salad with Feta Cheese
There are few salads as refreshing as Watermelon Salad with Feta cheese. Add handfuls of fresh herbs like mint and basil and a lemony dressing for the perfect summer side dish.
Ingredients You’ll Need
This salad is so incredibly simple so try to use the best quality ingredients you can find. The magic of this salad is the juicy, sweetness of the watermelon complimented by the salty feta so I keep the vinaigrette simple to allow the watermelon and cheese to shine.
- Watermelon. Use the ripest, sweetest seedless watermelon you can find. Other additions include: cucumber, red onion, arugula,
- Feta cheese. Use a firm, Greek-style feta cheese in brine. I like to cube the feta cheese but you can crumble feta too. Goat cheese is a good substitute.
- Herbs: I used fresh basil leaves and mint as these flavors work so well with the sweet watermelon and the salty cheese.
- For the dressing: Extra virgin olive oil/avocado oil, fresh lemon juice or lime juice, salt and black pepper. You could also use a Balsamic vinegar dressing and add a teaspoon of honey and dijon mustard.
How To Make Watermelon Salad with Feta Cheese
It couldn’t be simpler. Cube the watermelon and feta cheese, add to a large bowl. Add the fresh herbs, mix up the dressing and toss together. Done!
Can I make this ahead?
You can chop the watermelon and feta cheese and place in an airtight container a day in advance and make the dressing and keep it in a separate jar in the fridge. Toss the salad together right before serving to prevent the watermelon from going soggy.
Serving Suggestions
This watermelon feta salad recipe is the ideal side dish to serve during summer. Grilled chicken is our go-to but it works well with grilled pork chops, air fryer fish and spicy peri-peri chicken. It will also go well with other summer salads or vegetables on the grill like corn on the cob, etc. The smoky flavors of grilled or barbecued meat is a match made in heaven for the sweet-salty combination of the salad.

- 2 tbsp olive oil
- 2-3 tbsp fresh lemon juice
- salt and black pepper to taste
For the salad
- 5 cups watermelon cubed (approximately ¼ of a medium watermelon)
- 7 oz (200g) feta cheese cubed
- handful fresh herbs I used basil and mint
Instructions
- Whisk the dressing ingredients together in a large mixing bowl.
- Add the cubed watermelon, feta cheese and roughly chopped or torn herbs.
- Toss together and serve.
