Meal Plan #20 of 2026

This week we are making Marry Me Chicken Orzo, Zucchini Risotto, Cheesy Baked Meatballs, Creamy Salmon Pasta and Baked Beef Tacos. We’ve also had some requests to include season-appropriate alternatives to some of the dishes (think soups and salads which might not be ideal depending on the season you’re in).

Why You’ll love this recipe:

  • One Pan: One pan meals are a weeknight saver and this one is especially delicious.
  • Add a side: I love this on its own because it’s got carbs, veggies and protein all in one but a side of broccoli or asparagus would be delicious.

Tuesday

Zucchini Risotto

Why You’ll love this recipe:

  • Light yet comforting: Risotto is the perfect all-weather (except maybe a heat-wave) recipe. Creamy and comforting yet light from the zucchini and lemon zest.
  • Add a side: We eat this on its own as a meatless meal but feel free to add some chicken, shrimp or steak.

Cheesy Baked Meatballs

Why You’ll love this recipe:

  • Mea-prep friendly: The meatballs and sauce can all be prepped ahead (in fact, I always have frozen meatballs in the freezer so I just drop them straight into the sauce from frozen).
  • Add a side: Serve over spaghetti or with garlic bread to mop up the sauce.

Creamy Salmon Pasta

Why You’ll love this recipe:

  • Easy substitutes: Using salmon is delicious but you can use any tinned fish of your choice. Canned tuna in this creamy sauce is simply delicious and super budget-friendly.
  • Add a side: Add a big salad or some green beans!

Baked Beef Tacos

Why You’ll love this recipe:

  • So easy: This is one of the easiest Friday-night dinners you’ll ever make. Especially if you happen to have a batch of taco meat in the freezer.
  • Add a side: Serve with jalapeño crema for dipping, with guacamole or your favorite salsa.
