Meal Plan #26 of 2026
This week we are making Arroz con Pollo, Creamy Tomato Bacon Pasta, Lamb Chops, Chicken Stir Fry and the BEST Seafood Risotto. We’ve also had some requests to include season-appropriate alternatives to some of the dishes (think soups and salads which might not be ideal depending on the season you’re in).
We’ve also included a completed shopping list for your convenience. Simply click on the link and download! (Please note the shopping list does not include ingredients for breakfast and lunch recipes as these are optional. There is however space to add any ingredients you’ll need.)
Monday
Arroz con Pollo
Why You’ll love this recipe:
- One Pot: The chicken and rice all gets cooked in the same pot making clean-up a breeze.
- Meal-Prep Friendly: The chicken and rice keeps incredibly well in the fridge for up to 3 days.
- Add a side: This is definitely a complete meal on its own but a big salad or some broccoli on the side would be nice.
Tuesday
Creamy Tomato Bacon Pasta
Why You’ll love this recipe:
- So simple:Â A great option for weeknights, this pasta comes together in minutes and needs only a few pantry staples.
- Meal-prep friendly: Make the sauce ahead and toss with cooked pasta right before serving.
- Add a side: Garlic bread and arugula salad turn this into a casual feast.
Wednesday
Lemon Garlic Lamb Chops
Why You’ll love this recipe:
- Meal-prep friendly:Â Marinate the lamb chops and refrigerate for up to 3 days or pop them in the freezer for up to 3 months.
- Add a side: I love simple protein dinners because the side dishes can be whatever I have on hand. Crispy potatoes or rice, cucumber tomato salad or sautéed green beans. The options are endless.
Thursday
Easy Chicken Stir-Fry
Why You’ll love this recipe:
- Family Friendly: My family loves a good stir-fry and this one has simple flavors while being totally delicious so little ones can enjoy it too.
- So easy: I buy a bag of prepped stir-fry vegetables to make this as quick and easy as possible.
Friday
The BEST Seafood Risotto
Why You’ll love this recipe:
- Fancy but easy: Risotto can feel overwhelming because of all the stirring but the technique really is so simple.
- Make-ahead tips: The homemade stock is optional but does truly deliver the most delicious risotto. You can easily make it in advance and freeze it or keep it in the fridge for a day or two. If you’re planning on making this for guests, cook the risotto half way through (the rice should still be a little firm) then transfer to a sheet pan and spread into a thin layer. Allow to chill in the fridge then cover with plastic wrap and keep in the refrigerator for 1-2 days. To finish, scrape the rice into a deep pan or pot then continue adding stock until the rice is al dente, and finish as per the recipe.
