Monday
Easy Baked Lemon Chicken and Rice
Why You’ll love this recipe:
- One Pot: All throughout the year I appreciate a one-pot meal but especially during the festive season, the less dishes and effort, the better.
- Delicious and nutritious: The rice cooked in the chicken stock with the chicken thighs is deeply delicious. Healthy protein and carbs all in one. Just add a side of broccoli or green beans for a fibre boost.
Tuesday
Bolognese Pasta Bake
Why You’ll love this recipe:
- Family favorite: Bolognese sauce is a constant in our home. It guarantees empty plates and freezes beautifully making future dinners a breeze.
- Make-ahead friendly: Assemble the pasta bake and cover with foil then refrigerate for up to 24 hours before baking.
Wednesday
Instant Pot Lamb Curry
Why You’ll love this recipe:
- Incredible flavor in under an hour:Â Meat curries take up to 3 hours to simmer slowly so that the meat can become meltingly tender. Using a pressure cooker cuts that down to under an hour delivering an unbelievably delicious curry, perfect for weeknights. Don’t have an Instant Pot? Use our classic Lamb Curry recipe and meal prep it ahead of time.
- Great leftovers:Â Curry is better the longer it sits, giving the flavors time to develop. Curry is a great make-ahead dish and the leftovers are delicious.
Thursday
Butternut Squash Risotto
Why You’ll love this recipe:
If you’re in the US, you’ll be celebrating Thanksgiving and cooking up a storm. Check out our Thanksgiving sides recipes if you still need some inspiration.
- Meat-free: I love meatless recipes that are still hearty and delicious.
- Simple to make: Risotto can feel daunting because there’s a lot of stirring involved but it’s surprisingly simple to make and delivers a creamy, comforting risotto just perfect for enjoying out of a bowl on the couch.
Friday
Honey Soy Crispy Beef and Noodles
Why You’ll love this recipe:
- Perfect at-home fake-out: I love recipes that feel like take-out but are homemade. This recipe delivers all the same delicious flavor your favorite Chinese order does, but is healthier and homemade.
