Thanksgiving Leftover Sandwich
The ultimate Thanksgiving Leftover Sandwich with roasted turkey, stuffing, cranberry mayo, brussels sprouts and gravy all on thick slices of homemade bread. I mean, do we need to say any more?!

I love nothing more than the leftovers after a big holiday feast. Whether it’s Thanksgiving or Christmas, the leftovers the next day are always a highlight. I have so many leftovers recipes on Simply Delicious but this leftover Thanksgiving sandwich is perhaps the most glorious of all.
Juicy roasted turkey (you can sub in any leftover protein), thick slices of stuffing absolutely drenched in gravy, brussels sprouts and a smear of cranberry mayo on thick slices of bread is all kinds of delicious and reminds me of the famous Thanksgiving sandwich on Friends. I kind of get why Ross was so upset now…








Ingredients and Substitutions
- Leftover roast turkey. You could use chicken, ham, roast lamb, roast beef, etc. I used turkey breast but dark meat turkey can also be used.
- Stuffing. I used my bread stuffing recipe but you can use any stuffing/leftover dressing you served on the day. Mashed potatoes, roasted potatoes etc. can also be added.
- Cranberry sauce and mayonnaise. I love making cranberry mayo as the tart sweetness really cuts through all the richness of the other ingredients. Aioli would also be delicious.
- Brussels sprouts. Use any leftover veggies you have. You could also add fresh lettuce, tomatoes, cucumber etc.
- Bread. I used my white bread recipe but you can use store-bought bread, sourdough bread, etc.
- Optional: I added fried sage leaves for some extra flavor and drenched the stuffing in leftover turkey gravy but that’s optional. Fresh chives would also be delicious. For added acidity, pickles or pickled jalapeños would be fabulous. A few slices of cheese will be a welcome addition, especially if you plan on toasting the turkey sandwich in a hot pan. Cheddar or Swiss cheese are both good options.
How to make a Thanksgiving Leftover Sandwich
- Slice bread into thick slices. Mix together a few tablespoons of cranberry sauce with store-bought mayonnaise in a small bowl. Taste and adjust seasoning if necessary. You might need to add a pinch of salt or a squeeze of lemon juice. Add a dollop of the mayo the bread and spread using a knife.
- Add sliced turkey and stuffing then pour over some leftover gravy. Add warmed leftover brussels sprouts and finish with crispy sage (optional). Add another slice of bread smeared with the cranberry mayo then serve. You could also toast the sandwich in a panini press or hot pan if you prefer.

Serving Suggestions
This sandwich is definitely a meal on its own but you could add a side dish or two. Potato chips is the obvious answer (and a few chips stuffed into the sandwich wouldn’t be a bad idea either). Potato wedges, air fryer French fries or a fresh arugula salad would also be delicious.

- crispy sage I simply fried sage leaves in hot oil for 30 seconds then drained on kitchen paper
Instructions
- Slice bread into thick slices.
- Mix together a few tablespoons of cranberry sauce with store-bought mayonnaise.
- Taste and adjust seasoning if necessary.
- You might need to add a pinch of salt or a squeeze of lemon juice.
- Add a dollop of the mayo the bread and spread using a knife.
- Add slices of the roast turkey and stuffing then pour over some leftover gravy.
- Add warmed leftover brussels sprouts and finish with crispy sage (optional).
- Add another slice of bread smeared with the cranberry mayo then serve.
- You could also toast the sandwich in a panini press or hot pan if you prefer.
