These buffalo chicken sliders with blue cheese sauce are the things food dreams are made of.

Using a rotisserie chicken is my go-to for all recipes that require shredded chicken but you can substitute with poached chicken breasts as well. The buffalo sauce is straight forward and easy. I added a bit of sugar to balance the acidity in the sauce but that is completely optional and not traditional. You could also use your favorite store-bought buffalo sauce as substitute. Mix the shredded chicken with the sauce, add to a toasted slider bun with crunchy lettuce, that glorious blue cheese sauce (although creamy ranch dressing will also be great) and you’re in it to win it! So easy, so insanely tasty and perfect weekend food. Go on, you know you want to!

Ingredients Needed

  • Butter.
  • Hot sauce. I used Tabasco but any hot sauce you like will work.
  • Vinegar.
  • Brown sugar.
  • Blue cheese.
  • Sour cream.
  • Rotisserie chicken.
  • Bread rolls/buns. Brioche rolls, Hawaiian sweet rolls, potato buns, etc. will all be delicious.
  • Salt and black pepper.

How to make Buffalo Chicken Sliders

Start by combining the buffalo sauce ingredients in a small saucepan and bring to a gentle simmer. Cook until the sugar has dissolved then remove from the heat and set aside. Shred the chicken then toss with the spicy buffalo sauce. Split the buns in half and toast in a hot pan then add lettuce/arugula, the chicken mixture and the blue cheese dressing to the bottom half of the rolls. If using ranch dressing, I would suggest adding some cheese like cheddar cheese, Monterey Jack or mozzarella cheese for extra flavor to the sliders. Close with the top half of the rolls then serve.

How do I make shredded chicken?

For easy shredded chicken, use a store-bought rotisserie chicken and remove all skin and bones. Shred with two forks or place the chicken in the bowl of a stand mixer and mix with the paddle attachment until the chicken is shredded to your liking. You can also use poached chicken breasts to make shredded chicken. Poach skinless, boneless chicken breasts in chicken stock until cooked through then shred in the same way mentioned above.

Can I make this ahead?

The chicken can be combined with the buffalo sauce a few days in advance and kept in an airtight container in the refrigerator. If you want to prepare this a few hours ahead, transfer the chicken coated with the sauce to a baking dish, cover with aluminum foil and keep warm in a low oven until you’re ready to serve. The chicken freezes very well and be kept in the freezer for up to 3 months.

Ingredients

for the buffalo sauce

  • 1 cup butter
  • ½ cup hot sauce I used Tabasco
  • 2 tbsp vinegar
  • 1 tbsp soft brown sugar
  • 1-2 teaspoons salt to taste
  • black pepper to taste

for the blue cheese sauce

  • 50-100 g blue cheese crumbled (to taste)
  • 1/2 cup sour cream
  • salt to taste

for the sliders

  • 1 rotisserie chicken shredded, skin and bones discarded
  • 8 slider rolls smaller than burger buns, buttered and toasted
  • Extra blue cheese crumbled
  • lettuce

Instructions

  • For the buffalo sauce, combine all the ingredients in a saucepan and allow to come to a boil.
  • Remove the sauce from the heat and pour over the chicken. Mix well. 
  • To make the blue cheese sauce, combine the ingredients in a small food processor and blitz until combined. Alternatively you could use an immersion/stick blender.
  • To assemble the sliders, top the toasted buns with the lettuce and a generous spoonful of the shredded buffalo chicken then drizzle over the blue cheese sauce.
  • Serve immediately.

  1. Hi Alida, just saw the above comment , and thought I will share my opinion. We are buffalo wing fans! Here in USA we use Pete’s hot sauce or Frank’s hot sauce. It has a better flavor than Tabasco. Surely you can use Tabssco. The two famous buffalo chains here are Hooters and Buffalo Wild Wing. The Buffalo sauce is not sweet at all. It is only made with hot sauce and butter. The ratio is 1:1. Just boil it a few minutes and that is it. Any how , I love the combination of sweet and spicy. It takes a while to get use to only the hot sauce and butter taste. That is probably why they drown it with blue cheese dip or ranch dip:))

You’ll have to excuse my mistake as here in South Africa the only buffalo sauce I had ever tasted was bottled. I did however research buffalo sauces quite extensively before making this recipe. Would love to know your thoughts.
