Easy Greek Salad Dressing

If you’ve been buying bottled Greek dressing, I need you to stop what you’re doing. Because once you make this easy Greek salad dressing at home, there is truly no going back. It takes a few minutes, uses ingredients you probably already have and tastes so much better than anything store-bought.

I make a batch of this almost every week because it’s so versatile. Toss it over a classic Greek salad with tomatoes, cucumber, red onion, olives and feta. Drizzle it over grilled chicken. Use it as a marinade or as the most delicious dip for crusty bread. It’s the dressing that does it all.

Why you’ll love this

Traditionally, Greeks don’t actually dress their salad with anything acidic. In a true Horiatiki (village) salad, they only use olive oil, dried oregano, salt and black pepper. The juices that come out of the tomatoes and cucumber makes a delectable “sauce” at the bottom of the bowl which is often fought over.

However, Greek salad dressing is sold bottled all over the world and as such, we have become accustomed to associating a certain flavor profile with Greek salad. The magic is in the combination of really good olive oil, red wine vinegar and a squeeze of fresh lemon juice. Add some dried oregano, a clove of garlic and you’ve got a dressing that’s bright, tangy and just the right amount of herby. When you taste this over a delicious Greek salad, it will taste like the best salad at your local Greek restaurant. Fresh, vibrant and simply delicious.

Tips for the Best Greek Salad Dressing

  • Use good olive oil. Since this dressing is mostly olive oil, quality matters. You don’t need to break the bank, but grab the best extra virgin olive oil you can.
  • Fresh lemon juice only. This is not the place for bottled lemon juice. Fresh lemon juice makes all the difference here.
  • Let it sit. If you can, let the dressing sit for 15 to 20 minutes before using it. The flavors blend together and it gets even better.
  • Make it ahead. This dressing keeps in the fridge for up to a week. Just give it a good shake before using.

Serving Suggestions

The obvious answer is over a Greek salad, but don’t stop there. This dressing is incredible over roasted vegetables, grain bowls or even as a dip for warm pita bread. It also makes a fantastic quick marinade for chicken or shrimp.

Once you have this in your fridge, you’ll find yourself putting it on just about everything.
