Meal Plan #25 of 2026
This week we are making Baked Chicken Breasts, Masala Baked Fish, Creamy Tomato Pasta, Chicken Meatballs and Easy Grilled Chicken Burgers. We’ve also had some requests to include season-appropriate alternatives to some of the dishes (think soups and salads which might not be ideal depending on the season you’re in).
We’ve also included a completed shopping list for your convenience. Simply click on the link and download! (Please note the shopping list does not include ingredients for breakfast and lunch recipes as these are optional. There is however space to add any ingredients you’ll need.)
Monday
Baked Chicken Breast
Why You’ll love this recipe:
- High Protein: You don’t get much better than a simple baked chicken breast for a high protein option. The difference here is that this one is actually delicious.
- Super quick: Baked in less than 20 minutes, this really is a weeknight wonder.
- Add a side: Serve it with pretty much anything you want. Keep it light and add some green beans and a big salad or add crispy potatoes.
Tuesday
Masala Baked Fish
Why You’ll love this recipe:
- Elevated but simple: This is the perfect recipe to try if you’re intimidated by cooking fish. It couldn’t be simpler and comes together beautifully.
- Meal-prep friendly: The fish can be baked and kept in an airtight container in the fridge for 2 days.
- Add a side: I always serve the fish with the turmeric rice listed in the recipe with a quick chopped salad.
Wednesday
Tomato Cream Pasta
Why You’ll love this recipe:
- Meal-prep friendly: The sauce freezes incredibly well so I always make a double or triple batch and keep it in the freezer for speedy weeknight meals.
- Add a side: Serve garlic bread to mop up the sauce or a big arugula salad. Make extra of the chicken breast on Monday and add to the side of the pasta for a protein boost.
Thursday
Marry Me Chicken Meatballs
Why You’ll love this recipe:
- Family Friendly: This recipe is a crowd pleaser and even my spinach-hating daughter loves the sauce.
- Add a side: Serve the meatballs over pasta, mashed potatoes or with rice. Some extra green vegetables like broccoli or zucchini wouldn’t be a bad idea either.
Friday
Grilled Chicken Burgers
Why You’ll love this recipe:
- Meal Prep Friendly: Marinate the chicken when you buy it and pop it in the freezer until Friday. Thaw, grill and eat!
- Add a topping: I love a spicy mayo (recipe is with the burgers) with lettuce, tomatoes and red onion but add any of your fave burger toppings here.
