Meal Plan #31 of 2026
This week’s meal plan includes Chicken Chickpea Curry, Spicy Tuna Rice Bowls, Creamy Beef Taco Pasta, Juicy Indian-Spiced Lamb Chops and Chicken Tacos with Pico de Gallo. Where appropriate, we’ll include seasonal swaps so you’re not eating hearty soups and stews in summer or refreshing salads in winter. 🙂

Monday
Chicken Chickpea Curry
Why You’ll love this recipe:
- Family Fave: The curry sauce is aromatic and spiced but not spicy, making it ideal for a family meal. The chicken is fall-apart tender and the chickpeas soak up all that flavor.
- Add a side: We love this with rice and a quick cucumber salad for a weeknight meal but add naan, roti or poppadoms for a casual feast.
Tuesday
Spicy Tuna Rice Bowl
Why You’ll love this recipe:
- Made with pantry staples: Tuna, rice and whatever fresh veg you have in the fridge (avocado, cucumber, radish all work well). I like adding edamame for extra protein and fiber but this bowl is totally customisable to suit your preference.
- Great for meal prep: The tuna can be prepped days in advance and I often use microwave rice, making this a true 15-minute meal.
Wednesday
Creamy Taco Pasta Bake
Why You’ll love this recipe:
- Incredible flavor:Â The combination of creamy taco meat, fried peppers and onions and taco seasoning makes this an irresistible weeknight dinner.
- Great for meal prep: The taco meat can be prepared and kept in the fridge for up to 3 days or frozen for up to 3 months. The assembled pasta bake (unbaked) can be covered well and frozen for up to 3 months (bake from frozen) or kept in the fridge for a day before baking. Add a little extra liquid to the taco meat as the pasta will continue absorbing liquid as it sits and can dry out the pasta bake.
Thursday
Indian-Spiced Lamb Chops
Why You’ll love this recipe:
- So easy: This meal is one of our favorite easy high-protein options. The marinated chops can be kept in the fridge for 2 days before either cooking in a hot pan, grill pan or in the air fryer. As a shortcut for the spices listed, use the same Garam Masala you’ll need for the chicken curry.
- Add a side: The cucumber salad in this recipe is delicious with the spiced lamb chops but we also love crispy potatoes or my fattoush salad as a side.

Chicken Tacos with Pico de Gallo
Why You’ll love this recipe:
- Perfect Friday dinner: These tacos are so easy and so delicious. To keep things simple on a Friday night, I use my homemade taco seasoning or a store-bought version instead of the spices listed.
- Add a side: We love these tacos with pico de Gallo, avocado and sour cream but add my easy 5-minute salsa, corn salsa or one of our family faves, Mexican street corn.
