Meal Plan #32 of 2026

This week’s meal plan includes Cheese and Tomato Pasta Bake, Tandoori Chicken, Pork Sausage Meatballs, Moroccan Chicken Couscous Bowls and Baked Beef Tacos. Where appropriate, we’ll include seasonal swaps so you’re not eating hearty soups and stews in summer or refreshing salads in winter. 🙂

Cheese and Tomato Pasta Bake

Why You’ll love this recipe:

  • Family Fave: This is such a great all-round people pleaser. The tomato sauce is flavorful without being overpowering for little palates.
  • Add a side: Add some garlic bread and a big green salad for a weeknight feast.

Easy Tandoori Chicken

Why You’ll love this recipe:

  • Meal prep friendly: The chicken can be marinated and refrigerated for a day or frozen for up to 3 months. The cooked chicken also keeps well in the fridge for up to 3 days.
  • Build your bowl: We love the juicy chicken thighs with turmeric or curry rice, naan or roti and a quick cucumber salad.

Wednesday

Pork Sausage Meatballs with Pasta

Why You’ll love this recipe:

  • So easy: Using store-bought pork sausages for the meatballs means all you’re doing is forming the meatballs. All the seasoning has been done for you.
  • Great for meal prep: The meatballs in the sauce keeps well in the fridge for up to 3 days and can be frozen for up to 3 months.

Thursday

Moroccan Chicken Couscous Bowls

Why You’ll love this recipe:

  • So easy: This is one of my fave 15-minute meals. The chicken is seasoned and grilled while the couscous hydrates. Another great one for meal prep too and the leftovers are excellent for lunch the next day.
  • Build your bowl: We love adding cucumber, pomegranate and seasoned chickpeas but you can add a quick tomato salad, grilled zucchini, a dollop of tzatziki or baba ghanoush or just keep it simple.

Friday

Baked Beef Tacos

Why You’ll love this recipe:

  • Perfect Friday dinner: I often use leftover or frozen taco meat for these tacos making the perfect for a speedy Friday night dinner.
  • Add a side: We love these with jalapeño crema for dipping but you can serve them with salsa or guacamole too.
