This week we are cooking Baked Lemon Chicken and Rice, Creamy Salmon Pasta, Balsamic marinated steak, Marry Me Chicken Meatballs and Easy Smashed Lamb Wraps.

Monday
Easy Baked Lemon Chicken And Rice
Why You’ll love this recipe:
- One-Dish Wonder: The chicken is seared, rice is added and you bake the whole thing in one pan. Exactly what a Monday night needs.
- Great leftovers or as meal prep: The chicken and rice keep well in the fridge for up to 3 days.
- Add a side: Keep it simple and serve as is add a green salad or broccoli.
Tuesday
Creamy Salmon Pasta
Why You’ll love this recipe:
- Versatile:Â This pasta works with any smoked or tinned fish. Tuna, mackerel, etc will all be delicious in the sauce and perhaps more economical than salmon, depending on where you live.
- Add a side: We love asparagus, broccolini or green beans served on the side.
Wednesday
Balsamic Marinated Steak

- Make-ahead friendly:Â Marinate the steak and refrigerate for up to 2 days or freeze for up to 3 months.
- Add a side: Serve with your favorite side dishes or whatever you have in the fridge. We love a baked potato or potato wedges, creamy mushroom sauce and a big salad with steak.
Thursday
Marry Me Chicken Meatballs

- Comfort food, personified: Rich, creamy and absolutely delicious. The juicy meatballs in that incredible sauce has become a firm-favorite in our household.
- Add a side: Serve over rice, mashed potatoes or with crusty bread to soak up the sauce.
Friday
Smashed Lamb Wraps
Why You’ll love this recipe:
- Quick and easy for Friday night: The lamb mixture takes 5 minutes to mix. Smash onto wraps, a quick sear in a hot pan and you’re ready to go. Task your partner or one of the kids to make the chopped salad topping and stir together the quick sauce and Friday’s dinner is ready in a flash.
- Add a side: Honestly, we don’t even bother with a side – especially on a Friday. But if you prefer, add a side of corn on the cob and some air fryer potato wedges.
