Meal Plan #15 of 2026
This week we are eating Butter Chicken Curry, Baked Meatballs, Easy Baked Chicken, the creamiest Mac and Cheese and Easy Burgers on Friday.
We’ve also included a completed shopping list for your convenience. Simply click on the link and download! (Please note the shopping list does not include ingredients for breakfast and lunch recipes as these are optional. There is however space to add any ingredients you’ll need.)
Monday
Butter Chicken Curry
Why You’ll love this recipe:
- Make-ahead friendly: Marinate the chicken the day before to make on-the-day cooking a little simpler. The curry can be fully cooked and kept in the fridge for up to 3 days and it freezes beautifully so I like to double the quantities so I have another dinner waiting in the freezer.
- Add a side: Keep it simple and serve with steamed basmati rice or add a side of curry rice and naan for a delicious feast.
Tuesday
Cheesy Baked Meatballs
Why You’ll love this recipe:
- Make-ahead friendly: The meatballs can be formed and kept covered in the fridge for up to 24 hours. They also freeze very well uncooked so I like to make them, pop them in a freezer bag and freeze. On the day, let them thaw and proceed with the recipe as instructed.
- Add a side: I love serving the meatballs over cooked pasta but it’s also delicious served with crusty bread, garlic bread or focaccia to swipe through the sauce. For a vegetable side, sautéed broccolini is go-to in our house.
Wednesday
Easy Baked Chicken Breast
Why You’ll love this recipe:
- So easy! Season and bake. Two steps and you’re guaranteed perfectly juicy, delicious chicken.
- Versatile: Serve with tomato pasta, with rice and vegetables or in tacos. I love baking extra to keep on hand for easy lunches too!
Thursday
Mac and Cheese
Why You’ll love this recipe:
- Comfort food, personified: This easy, classic baked Mac and cheese is the epitome of comfort food. Rich, creamy and indulgent, it’s a once-in-a-while treat we simply love. I love adding a layer of sliced tomatoes on top (like my mom used to) but that’s optional.
- Add a side: To cut through the richness I like adding a lemony side salad.
Friday
Burgers with the BEST burger sauce
Why You’ll love this recipe:
- Keep it simple: The burger sauce is the star here so feel free to use store-bought burger patties.
- Add a side: The sky’s the limit here. Go healthy and add a side of corn on the cob and some air fryer potato wedges or go extra with fries and honey mustard dipping sauce.
