Meal Plan 10 of 2026

This week we are making Coconut Curry Chicken Thighs, Bucatini Amatriciana, Masala-Baked Fish, Air Fryer Orange Chicken and Surf and Turf for the weekend.

Monday

Wednesday

Masala-Baked Fish with Turmeric Rice

Why You’ll love this recipe:

  • Easy: The fish is simply spiced with a curry oil and baked until flaky and tender, the rice comes together quickly. All-in-all, the perfect healthy weeknight meal.
  • Meal-prep friendly: The fish can be seasoned and kept in an airtight container in the fridge for 24 hours. The rice can be made and kept in the fridge for a couple of days.
  • Add a side: I love serving the fish and rice with a dollop of yogurt and a simple chopped salad.

Air Fryer Orange Chicken

Why You’ll love this recipe:

  • Family-friendly: The flavors are all mild and picky-eater friendly. I mean, who can resist crispy, sticky chicken and rice?
  • So easy: The air fryer takes all the messy work out of cooking the chicken but you can use my classic Orange Chicken recipe if you don’t have an air fryer.
  • Add a side: Serve with simple steamed rice or go extra and add garlic butter rice. Broccoli or sugar snap peas are a good veggie side.

Surf and Turf

Why You’ll love this recipe:
