This week we are making Chicken Fajita Bowls, Tomato Basil Pasta, Garlic Butter Baked Fish, Creamy Chicken Noodle Soup and Steak au Poivre.

Monday

Chicken Fajita Bowls

Why You’ll love this recipe:

  • Meal Prep Friendly: The chicken can either be marinated and cooked ahead or just kept marinated in the fridge/freezer. The rice and peppers can also be cooked ahead.
  • It’s healthy AND delicious: At 500 calories per serving with over 40g of protein and 8.3g of fiber, this is one of the recipes I turn to when I want to eat something delicious and nutritious.

Tuesday

Tomato Basil Pasta

Why You’ll love this recipe:

  • Family-Friendly:ย This is one of our family’s favorite meals. It’s super easy and perfect for all ages.
  • Versatile: In Summer I like making this pasta with ripe tomatoes but it works just as well with canned cherry tomatoes. My Creamy Tomato Pasta is a great alternative.
  • Add a side: This is often just a quick bowl-food kind of dinner for us but a side of garlic bread or an arugula salad will be a great addition.

Wednesday

Lemon Garlic Butter Baked Fish

Why You’ll love this recipe:

  • Quick and easy:ย The sauce takes minutes to make and get spooned over the fish before baking in a hot oven. Depending on the sides, dinner can be on the table in less than 20 minutes.
  • Add a side: Serve with rice or add a side of sautรฉed broccolini.

Thursday

Creamy Chicken Noodle Soup

Why You’ll love this recipe:

  • Comfort food, personified: Rich, creamy and absolutely delicious. This is the kind of comfort food weeknights beg for. Satisfying but easy.
  • Meal prep tips: Use leftover cooked chicken or grab a rotisserie chicken from the store. The soup can also be prepped ahead and frozen then simply reheat, add the pasta/noodles and serve!
  • A lighter alternative: If you’re experiencing warmer weather, I would suggest my easy grilled chicken and vegetables as an alternative.
  • Add a side: This is a great one-pot meal that needs no sides but crusty bread is always a winner with soup.

Friday

Steak au Poivre

Why You’ll love this recipe:

  • Steak House At Home: This is one of our favorite restaurant-style meals to cook at home. The steak is quick to cook, the sauce comes together in minutes and served with air fryer French fries or baked potatoes, this makes for the perfect Friday night dinner.
  • Add a side: French fries, baked potatoes or potato wedges are all good ideas. A big green salad or sautรฉed broccoli will also be delicious.
