Meal Plan #23 of 2026
This week we are making Rotisserie Chicken and Mushroom Soup, Cottage Pie, Butter Chicken Curry, Easy Creamy Tomato Pasta and Taco-Stuffed Sweet Potatoes. We’ve also had some requests to include season-appropriate alternatives to some of the dishes (think soups and salads which might not be ideal depending on the season you’re in).

Monday
Rotisserie Chicken Mushroom Soup
Why You’ll love this recipe:
- Light and healthy: Even though this recipe is substantial (chicken, mushrooms, spinach), it’s surprisingly light and not at all too-rich.
- Meal-prep friendly: This soup lasts well in the fridge for up to 3 days or in the freezer for 3 months.
- Add a side: We love this with easy crusty bread or focaccia.
- Seasonal sub: Make the Viral Rotisserie Chicken Rice is a heat-wave friendly option while still being super easy and using the convenience of a store-bought rotisserie chicken.
Tuesday
Classic Cottage Pie
Why You’ll love this recipe:
- Family-friendly comfort food:Â This is a family classic with good reason. Easy and comforting.
- Meal-prep friendly: Make the entire pie on Sunday, cover well and freeze unbaked. Uncover and pop into a hot oven and bake until golden and bubbling for a fuss-free weeknight meal.
- Add a side: All you need is a big side salad but broccolini or green beans would be a nice addition too.
- Seasonal sub: Make my easy creamy beef pasta instead!
Wednesday
Butter Chicken Curry
Why You’ll love this recipe:
- Meal-prep friendly:Â Butter Chicken is one of my favorite freezer meals. As with all curries, the flavor continues to develop and just get better as the curry sits. Keep it in the fridge for up to 3 days or in the freezer for up to 3 months.
- Add a side: Serve with my easy curry rice and roti or naan.
- Seasonal Sub: My Grilled Curried Chicken Breasts scratch the curry-itch without adding too much cooking or an overly warm meal. We love it with wraps or roti, chopped salad and a dollop of yogurt.
Thursday
Tomato Cream Pasta
Why You’ll love this recipe:
- Family Friendly: If you like the idea of a classic Vodka sauce but never have vodka in the house or prefer to cook without alcohol, this recipe is perfect.
- Add a side: Add garlic bread and a zesty arugula salad and you’re set!
Friday
Taco-Stuffed Sweet Potatoes
Why You’ll love this recipe:
- Meal Prep Friendly: The taco meat can be prepped and kept in the freezer for up to 3 months. The sweet potatoes can be baked or air fried, kept in an airtight container in the fridge and reheated before assembling. I almost never make these from scratch because the elements are all prepped and ready to go.
- Add a topping: Guacamole, cheese, sour cream, pico de Gallo, salsa. Go wild!
