Meal Plan #30 of 2026
This week’s meal plan includes Honey Mustard Chicken Thighs, Taco-Stuffed Sweet Potatoes, Marry Me Chicken Orzo, Smashed Lamb Wraps and Chicken Burgers. Where appropriate, we’ll include seasonal swaps so you’re not eating hearty soups and stews in summer or refreshing salads in winter. 🙂

Monday
Honey Mustard Chicken Thighs
Why You’ll love this recipe:
- Easy Prep: The sauce is mixed, poured over the chicken and it gets popped in the oven until golden brown and sticky.
- Add a side: These chicken thighs are particularly delicious with a quick easy fried rice but it’s also great with crispy potatoes and a tomato cucumber salad.

Taco-Stuffed Sweet Potatoes
Why You’ll love this recipe:
- Family favorite: The entire family loves this one and I love that everyone can build their own sweet potato to their own preference.
- Great for meal prep: The taco meat and sweet potatoes can be prepped in advance to make dinner time a little easier.
Wednesday
Marry Me Chicken Orzo
Why You’ll love this recipe:
- Incredible flavor: The combination of sun-dried tomatoes, spinach and parmesan cheese makes this a truly mouthwatering dish.
- Versatile: The sauce is delicious with any pasta of your choice but I love how the orzo properly soaks up the sauce.

Smashed Lamb Wraps
Why You’ll love this recipe:
- Family-friendly: Savory meat, a quick chopped salad and a creamy yogurt sauce means the entire family will love this one. I add fresh chillies to mine because I like the heat but that’s totally optional.
- Add a side: We often just have these on their own but a side of air fryer potato wedges would make a great side.

Grilled Chicken Burgers
Why You’ll love this recipe:
- Perfect at-home fake-out: If you love Nando’s, you’re going to love these burgers. The chicken is perfectly seasoned and so juicy and that peri-peri mayo is just divine.
- Add a side: Fries, wedges, sweet potato fries or corn on the cob are all great additions.
