Meal Plan #35 of 2026
This week’s meal plan includes a Cheese and Tomato Pasta Bake, Chicken Tacos, Masala Baked Fish, Moroccan Chicken Bowls and classic Burgers and Fries. Where appropriate, we’ll include seasonal swaps so you’re not eating hearty soups and stews in summer or refreshing salads in winter. ๐

Monday
Cheese and Tomato Pasta Bake
Why You’ll love this recipe:
- Easy and delicious. The tomato sauce comes together in minutes and is tossed through the pasta, layered with cheese and baked until golden and bubbling.
- Family friendly: The whole family will love this – itโs mild enough for kids, but tasty enough that parents won’t feel like they’re eating off the kids’ menu.
Tuesday
Chicken Tacos with Pico de Gallo
Why You’ll love this recipe:
- 15-minute wonder: The chicken is seasoned and seared in a hot pan. The pico de Gallo takes a few minutes of chopping and then we’re ready to eat. This is one I turn to often on busy night.s
- Meal-prep friendly: I love having marinated chicken in the freezer for meals like this. Take it out in the morning to thaw and cook it quickly in the air fryer or a hot pan. The pico de Gallo can be chopped ahead but season it right before serving to prevent the tomatoes from going soggy.
Wednesday
Masala Baked Fish with Turmeric Rice
Why You’ll love this recipe:
- Healthy AND Delicious:ย The fish is light, high in protein but incredibly delicious thanks to the curry mixture brushed over the top. The rice adds good carbs and the salad adds a boost of micro-nutrients.
- Add a side: If you prefer to add a vegetable side dish, my curry-roasted cauliflower, air fryer broccoli or green beans would all be delicious.
Thursday
Moroccan Chicken Couscous Bowls
Why You’ll love this recipe:
- So easy: Another 15-minute meal I make often. The couscous absorbs the boiling water while you cook the seasoned chicken. I usually just marinate some chickpeas for added fiber and chopped cucumber for a pop of freshness but you really add any side dish of your choice to finish the bowl off.
- Add a side: Chopped salad, cucumber radish salad or a tomato salad will all be good. It’s also delicious with a veggie side like broccoli, zucchini or green beans.
Friday
Burgers and Fries
Why You’ll love this recipe:
- Perfect Friday dinner: Easy burgers and fries are one of our favorite Friday night dinners. I often just make the burger patties in the air fryer but since we’re serving the burgers with air fryer fries, I’ll cook them quickly in a hot pan. They can also be grilled (which is perfect in Summer).
- Add a side: The crispy fries are key here but if you can’t be bothered, throw a bag of frozen fries in the air fryer. Corn on the cob or potato salad would be delicious too.
