Meal Plan #19 of 2026
This week we are making oven-roasted whole chicken, taco-stuffed sweet potatoes, creamy chickpea curry, chicken stir fry and crowd-favourite smashed burger tacos. We’ve also had some requests to include season-appropriate alternatives to some of the dishes (think soups and salads which might not be ideal depending on the season you’re in).
We’ve also included a completed shopping list for your convenience. Simply click on the link and download! (Please note the shopping list does not include ingredients for breakfast and lunch recipes as these are optional. There is however space to add any ingredients you’ll need.)
Monday
Oven Roasted Whole Chicken
Why You’ll love this recipe:
- Meal Prep Friendly: The chicken can either be spatchcocked and seasoned on Sunday and kept in the fridge until you’re ready to cook on Monday. I would double up the recipe so you have cooked chicken to use for wraps, sandwiches, etc. during the week.
- Add a side: I roasted the chicken on a bed of sliced potatoes so you could just add a big side salad or sauteed broccolini. Smashed potatoes or roasted potatoes would be perfect too.
Tuesday
Taco-Stuffed Sweet Potatoes
Why You’ll love this recipe:
- Family-Friendly: This is one of our family’s favorite meals. Everyone builds their own stuffed sweet potato which guarantees empty plates.
- SO healthy: Packed with protein, fiber and complex carbohydrates, this is the ideal nutritious weeknight dinner.
- Add a side: We eat this on its own topped with guacamole, pico de Gallo, and sour cream or Greek yogurt.
Wednesday
Butter Chickpea Curry
Why You’ll love this recipe:
- Quick and easy: This is one of our favorite weeknight curries. It cooks in a fraction of the time a meaty curry does and is genuinely satisfying. In fact, my kids often prefer this version!
- Add a side: Serve with rice, naan or my cottage cheese tortillas for a boost of protein.
- Summer alternative: For a light alternative if you’re experiencing the heat, try my Creamy Tuna Pasta Salad.
Thursday
Easy Chicken Stir Fry
Why You’ll love this recipe:
- Meal prep tips: Use leftover cooked chicken or grab a rotisserie chicken from the store with a bag of pre-cut veg to make this the easiest weeknight dinner. The Stir-Fry sauce can be made a few days in advance. Leftovers are great for lunch the next day too!
Friday
Smashed Burger Tacos
Why You’ll love this recipe:
- Take-Out at Home: These easy burger tacos are pretty much the easier version of your favorite take-out burger, at home. They are so quick to make, lower in calories but just as delicious. Load them up with cheese, lettuce, pickles and burger sauce and dig in!
- Add a side: French fries or potato wedges are both good ideas, although we eat these on their own, most often. Corn on the cob is a great veggie side dish option.
