This week we are eating Creamy Mushroom Chicken, Lemon-Garlic Lamb Chops, Creamy Salmon Pasta, Greek Chicken Skewers and Crispy Beef and Noodles for the weekend.

Monday
Creamy Mushroom Chicken

Creamy Salmon Pasta

- Versatile: Use leftover cooked salmon, canned salmon or even sub in a can of tuna. The creamy sauce does most of the work so work with what you’ve got.

Thursday
Greek Chicken Skewers

- Perfect for meal prep: This is a make-ahead dream. The chicken can be marinated and refrigerated or frozen. Skewers can be assembled and refrigerated or frozen. And leftover kebabs are delicious the next day. Make extra and freeze for another meal.

Friday
Honey Soy Crispy Beef and Noodles

- Take-out at home: This crispy beef and noodles recipe is one of our family favorites. Better than anything we get at our local Chinese take-out and always delicious.
- Meal-prep friendly: The steak can be cut and marinated then refrigerated for up to 24 hours. Fried steak can also be re-crisped in the air fryer if you want to prep even further ahead. The sauce can also be made a few days in advance and just re-heated with a splash of water before tossing with the beef and noodles.
