Meal Plan #14 of 2026
This week we are making an easy one-pan Greek Chicken Bake, Tomato soup with Grilled Cheese, Spaghetti Bolognese, Chicken Mushroom Risotto and the BEST Homemade Chicken Nuggets.

Monday
Greek Sheet Pan Chicken
Why You’ll love this recipe:
- One-pan: Everything happens in one sheet pan making clean-up a breeze!
- Add a side: This is a full meal on its own but adding a fresh tomato cucumber salad is a great idea.
Tuesday
Easy Tomato Soup with Grilled Cheese
Why You’ll love this recipe:
- Make-ahead friendly:Â Whenever I make soup, I make a double batch so that we can have leftovers or I can freeze the rest for another meal.
- Add a side: The grilled cheese sandwich is the perfect side dish but crusty bread, homemade focaccia or a garlic bread grilled cheese are excellent options too.
Wednesday
Spaghetti Bolognese
Why You’ll love this recipe:
- So comforting! This is weeknight comfort. A sauce that is excellent when made-ahead, perfect for leftovers and freezes beautifully. Another one I make in bulk to make weeknight dinners even easier.
- Versatile: Add vegetables of your choice. Bolognese is a great recipe to add hidden veg to. Puree mushrooms, spinach, sweet potatoes, butternut squash or cauliflower and add to the sauce while simmering. You can also grate the veg and add to the sautéed onions if your kids aren’t too vegetable-averse.
- Add a side: Serve the bolognese over pasta of your choice and add a big side salad or garlic bread to mop up the sauce.
Thursday
cChicken Mushroom Risotto
Why You’ll love this recipe:
- One pan, so easy: The chicken is browned in the same pan the risotto is built in. This is a little slower of a recipe but super easy and one I like to make towards the end of the week.
- Add a side: We love asparagus or green beans on the side.
Friday
Chicken Nuggets
Why You’ll love this recipe:
- Take-out Fake-out: Healthier and quicker than take-out. These chicken nuggets are guaranteed to be a hit with kids and adults alike.
- Add a side: The sky’s the limit here. Go healthy and add a side of corn on the cob and some air fryer potato wedges or go full McD’s with fries and honey mustard dipping sauce.
